My mom and I recently took Sofia to see
The Wizard of Oz at the Parkland College Theatre. It was put on by a bunch of kids and was fantastic. The kids ranged in age from probably about 1st grade all the way through high school. You could tell how much time and effort they put into the play and it really paid off. Sofia really enjoyed it.
Before the show, we took her to dinner at Monical's. That's a local pizza place known for their thin crust pizza and french dressing. They have a somewhat decent gluten-free pizza, which is def. not PALEO but I ate it anyways. I usually get the cheese-free specialty pizza: lots of sauce, mushrooms, onions, green peppers and banana peppers. This time, knowing we'd be sitting in a theatre (and not wanting to burp spicy peppers...yeah TMI...but whatev) I swapped them out for red bell peppers. I of course dipped the entire thing in french dressing. It was so worth it. I'd have to say, the best g-f pizza I've had so far has been the Domino's one. It actually tastes like the greasy, doughy pizza that you just cannot eat being g-f. Another good option is from Biaggi's g-f menu. They're style is more flatbread and can be very, very tough if it's not warm-to-hot when served.
Enough with the g-f pizza debate. Let's talk about something more exciting - my personal 30 day PALEO challenge. Today is day one, and so far it's been pretty good. I'm not doing the absolutely no sugar, no way, no how 30 day challenge like here. Instead, I'm vowing to eat PRIMARILY PALEO for 30 straight days. No more cheating (which I have done - as stated above) just about every weekend for the past month. All these weddings and showers and parties have forced me to binge (yes, forced me) on all things wonderful. BUT LET ME TELL YOU...my knees are aching. Sunday I could barely walk the aisle up to communion. Which, by the way, serves up some great bread and wine (but offers grape juice and grain-free crackers upon request...I smell another PAELO in the congregation!!). Thus here is what I ate today:
Breakfast:
- 1 cup coffee black (not entirely PALEO but c'mon, I have to have it!)
- 1 apple
- 2 T almond butter
Lunch:
- Leftover grilled chicken leg quarters (about a cup of meat)
- 1 avocado
- 1/2 tomato
Dinner:
- 6 small ground lamb meatballs (made with whisked egg, curry powder, parsley, smoked garlic)
- 3 romain leaves (to use to eat the meatballs like a sandwich)
- Heaping drizzle of cucumber sauce (1/2 peeled cucumber, low-fat coconut milk, lime juice and a dash of hot sauce)
Dessert:
- Handful of Amish sweet potato chips
- 4 dried Kiwi slices
Maybe if I remember, I will keep posting my food for the next 29 days. Yeah right. I'm going to leave you in suspense considering I rarely get on here to blog. :)
